Yavaş gelişen etlik piliçlerin özellikleri ve geliştirilmesi

Öz:
Dünyada tavuk eti üretimindeki artış son 20 yıl içerisinde süreklilik kazanmış, gelecekte de bu durumun sürmesi beklenmektedir. Ayrıca alternatif üretim sistemleri ve tüketici taleplerindeki değişmelere uygun ürünlerin üretimi konusunda da gelişmeler sürmektedir. Özellikle yarı entansif, ekstansif, serbest gezinmeli (free-range) ve organik üretimden elde edilen ürünlere, tüketiciler daha fazla fiyat ödemeyi kabul etmektedirler. Bu ürünlerin daha doğal, sağlıklı, hayvan refahına uygun üretildiği imajından hareketle bu talep her yıl artmaktadır. Entansif üretimde olduğu gibi bu üretim sistemlerinde de hızlı gelişen etlik piliçlerin kullanımında fizyolojik ve metabolik sorunlar ortaya çıkmaktadır. Yavaş gelişen tavuklar, organik ve serbest gezinmeli yetiştirme sistemlerine daha uygun olup, 80-120 gün arasında 2.2-2.5 kg ağırlığa ulaşırlar. Organlar ve kaslar bir harmoni içinde geliştiklerinden, ani gelişmeden kaynaklanan metabolik ve fizyolojik bozuklukların görülme olasılığı düşer. Bu makalede alternatif yetiştirme (serbest gezinmeli, organik, yarı entansif, ekstansif) sistemlerine uygun yavaş gelişen etlik piliçlerin özellikleri ve dünyadaki üretimi üzerinde durulmuştur.

Developing slow growing meat chickens and their properties

Öz:
Poultry meat production showed on continuous the increase in last 20 years and it is expected that is continues in the future. Also, improvements continue in the products of alternative production systems and consumer demands. Consumers are willing to pay a higher price for the products of semi-intensive, extensive, free-range and organic production systems. Demand to these products rises every year due to their healthier, natural and animal friendly image. As in intensive production, the use of fast growing broilers in these systems causes physiologic and metabolic problems. Slow growing chickens are more suitable for organic and free-range systems and they reach to 2.2-2.5 kg live weight in 80-120 days, Because, organs and muscles grow in harmony, the possible metabolic and physiologic problems caused by fast growing decreases. This review emphasizes the characteristics of slow growing chickens suitable for alternative production systems (free range, organic, semi-intensive and extensive) and their production in the world.
