Besinlerde tekstür

Öz:
Tekstür, besinlerin yapısal, mekanik ve yüzey özelliklerinin, görme, işitme, dokunma ve kinestetik yol ile belirlendiği bir kalite kriteridir. Tekstürel özellikler mekanik ve geometrik özellikler olarak sınıflandırılır. Besinlerin tekstürü, objektif ve subjektif metotlar ile ölçülür. Besinlerin tekstürünün subjektif ve objektif değerlendirilmesi tekstür ve tat arasındaki ilişkiyi tanımlayan reolojik modele dayanmaktadır.

Texture in food

Öz:
Texture is the sensory and functional manifestation of structural, mechanical and surface properties of foods detected through the senses of vision, hearing, touching and kinesthetics. Textural characteristics are classified into mechanical and geometrical qualities. The measurements of food texture are objective and subjective methods. The subjective measurement of food texture and the objective measurement based on rheological model are described to clarify the relationship between texture and taste.
