Doğal biyopolimer bazlı (Biyobozunur) manokompozit filmler ve su ürünlerindeki uygulamaları

Öz:
Gıda endüstrisinde enzimatik ve bakteriyel bozulmanın geciktirilmesi ile gıda güvenliğinin sağlanması için farklı muhafaza ve ambalaj teknikleri kullanılmaktadır. Bu konudaki önemli gelişmelerden birisi de nanoteknoloji ve bu teknolojiyle hazırlanan biyopolimer bazlı nanokompozit filmlerdir. Nanoteknoloji araştırmacılara ambalaj malzemesinin yapısını molekül düzeyinde değiştirme şansı vermektedir. Araştırmacılar molekülleri yeniden tasarlayarak, gıda ambalajında istenilen pek çok fonksiyonu biraraya getirebilmektedirler. Nano parçacıkların ilavesi ile ürünlerde ışığa ve aleve direnç, güçlü mekaniksel ve ısıl performans ile gazlara karşı yüksek bariyer özellikleri sağlanmaktadır. Bu ambalajlarla gıdanın tazeliğini korumak ve donmuş ürünün daha önce çözünüp çözünmediğini görmek mümkündür. Nano-yapılandırılmış malzemeler ile oksijen absorblayıcı, antimikrobiyal ve gaz geçirgenliği olan nanokompozit filmler elde edilmektedir. Nanokompozit filmlerin gıda ürünlerindeki uygulamaları daha çok aktif/akıllı paketleme(antimikrobiyal filmler) ve yenilebilir film/kaplama teknolojisiyle kombine halde olmaktadır. Nanokompozit filmlerin elde edilmesinde kullanılan polimerlerden polisakkarit, protein ve lipid gibi doğal kaynaklardan elde edilen biyopolimerler biyobozunur, yenilebilir, çevre dostu ve antikanserojen oldukları için petro-kimyasal bazlı plastiklerin yerine geçebilecek iyi bir alternatif ambalaj materyali olarak görülmektedir. Nanokompozit filmler antioksidanlar, antifungal ajanlar, antimikrobiyaller, renk maddeleri ve diğer gıda bileşenleri gibi büyük bir katkı çeşidinin birleştirilmesi için de mükemmel araçlardır. Biyopolimer bazlı antimikrobiyal filmler ve yenilebilir film ve kaplamalar et, balık, tavuk ürünleri, tahıl, peynir, meyve ve sebze ürünlerini içeren geniş bir gıda grubunda yaygın şekilde kullanılmaktadır. Bu derlemenin amacı yaygın olarak kullanılan doğal biyopolimer bazlı nanokompozit filmler ve uygulamaları hakkında bilgi vermek, hem temel polimer kaynaklarından hem de su ürünleri işleme atıklarından hazırlanabilen nanokompozit filmlerin yine su ürünlerine uygulanarak atık sorunun azaltılmasıyla birlikte daha güvenli gıdaların üretilebileceği konusunu gündeme getirmektir.

Application of natural biopolymer based nanocomposite films in seafood

Öz:
It is used different conservation and packaging techniques to provide food safety by delaying enzymatic and microbial spoilage. One of the important development in this issue is nenotechnology and biopolymer based nanocomposite films, prepared with this technology. Nanotechnology gives the researchers the chance to change the structure of the materials on the molecular scale. Researchers can build up new design of molecules to achieve desirable functionalities. By adding nanoparticles, packages can be more light and fire resistant, can have stronger mechanical and thermal performance, high gas barrier functionalities. People can monitor the freshness of food or indicate whether the frozen food has been thawed. Nanocomposite films are applied mostly to foods with the combination of active/intelligent packaging (antimicrobial films) and edible film/coating technology. Nanocomposite films are obtained from natural biopolymers, such as polisaccharide, protein and lipid. These sources are accepted a good alternative packaging material to substitute for petro-chemical based plastics, due to they are edible, environment-friendly and anticancerogenic. Nanocomposite films are also excellent vehicles for incorporating a wide variety of additives, such as antioxidants, antifungal agents, antimicrobials, colors and other nutrients. Biopolymer based antimicrobial films/edible films are used for a variety of foods including meat, fish, poultry, bread, cheese, fruits and vegetables. The aim of this review is to explain mostly used natural based nanocompoiste films and their applications in seafood, to moot that thereby can producted more safety foods by reducing the waste problem via the films, which are prepared from both main polymer sources and seafood processing waste.
