FARKLI OLUM DÖNEMLERİNDE HASAT EDİLEN DOMATES MEYVELERİNDE METİL JASMONAT UYGULAMALARININ RAF ÖMRÜNE OLAN ETKİLERİNİN BELİRLENMESİ

Öz:
Çalışmada, yeşil olum ve pembe olum olmak üzere 2 farklı olum döneminde hasat edilen domates meyvelerine farklı dozlarda metil jasmonat uygulanarak raf ömrü süresince meyve kalite özelliklerinde meydana gelen değişimin belirlenmesi amaçlanmıştır. Hasat sonrası domates meyveleri oda koşullarında üç farklı dozda (kontrol (su), 0.5 ve 1.0 mmol L⁻¹) metil jasmonat konsantrasyonu ile muamele edilmiştir. Uygulama yapılan meyvelerde 10. ve 20. günlerde meyve ağırlık kayıpları, solunum hızı, meyve kalite özellikleri, meyve sertliği, renk değerleri ile fenolik madde miktarları belirlenmiştir. 20. gün sonunda yeşil olum döneminde hasat edilen domates meyvelerinde ağırlık kayıpları %2.99-6.97 arasında değişirken bu değerler pembe olumda hasat edilen meyvelerde %2.49-6.58 arasında belirlenmiştir. Ağırlık kayıpları yeşil olum döneminde 0.5 mmol L⁻¹ MeJA dozunda en fazla olurken pembe olum döneminde hasat edilen meyvelerde en yüksek kayıplar 1.0 mmol L⁻¹ MeJA dozunda gözlemlenmiştir. C vitamini değerlerinde 20. gün sonunda yeşil olum döneminde hasat edilen meyvelerde 89.50-153.0 mg 100 g⁻¹ arasında değişirken pembe olum döneminde bu değerler 165.50-210.00 mg 100 g⁻¹ arasında değişmiştir. Çalışma sonucunda MeJA uygulamalarının oda şartlarında muhafaza edilen domates meyvelerinin bazı raf ömrü özelliklerine önemli etkilerinin olduğu belirlenmiştir.

IMPACTS OF METHYL JASMONATE TREATMENTS ON QUALITY CHARACTERISTICS OF TOMATO FRUIT HARVESTED AT DIFFERENT MATURITY LEVEL DURING SHELF LIFE

Öz:
In the study, it was aimed to determine the change in fruit quality characteristics during the shelf life by applying different doses of methyl jasmonate to tomato fruit harvested in 2 different maturity periods which green and pink maturity level. Post-harvest tomato fruit were treated with three different doses of methyl jasmonate concentration (control (water), 0.5 and 1.0 mmol L⁻¹) at room conditions. Fruit weight losses, respiration rate, fruit quality characteristics, fruit firmness, color values and phenolic substance contents were determined on the $10^{th} and 20^{th}$ days of the treated fruit. At the end of the $20^{th}$ day, while the weight loss of tomato fruit harvested in the green stage period varied between 2.99-6.97%, these values were determined between 2.49-6.58%in fruit harvested at pink maturity. While the weight losses were highest at 0.5 mmol L⁻¹ MeJA dose in the green stage, the highest losses were observed at the 1.0 mmol L⁻¹ MeJA dose in the fruit harvested during the pink stage. At the end of the 20th day, the vitamin C values varied between 89.50-153.0 mg 100 g⁻¹ in the fruit harvested at the end of the 20th day, while these values changed between 165.50-210.00 mg 100 g⁻¹ in the pink ripening period. As a result of the study, it was determined that MeJA treatments had significant effects on some shelf life properties of tomato fruits kept at room conditions.
