AVUSTRALYA MUTFAK KÜLTÜRÜNÜN TARİHSEL GELİŞİMİ VE AVUSTRALYA’NIN GASTRONOMİ İMAJINA YÖNELİK ÇALIŞMALAR

Öz:
Bu çalışmanın amacı Avustralya mutfak kültürünün tarihsel gelişiminin ve Avustralya’nın gastronomi imajına yönelik çalışmaların incelenmesidir. Avustralya kıtasına yaklaşık 50.000-60.000 yıl önce yerleştiği düşünülen Aborjinler yaşam ve beslenme şekillerini 18. yüzyıla kadar korumayı başarmışlardır. Bu dönem içerisinde tarım ve hayvancılık yapmadan ihtiyaçlarını doğrudan doğadan temin edebilmişlerdir. Kıtaya ilk olarak 18. yüzyılda Avrupalıların yerleşmesiyle başlayan hızlı dönüşüm süreci günümüze kadar devam etmiştir. Süregelen yoğun göç hareketleri, yaşanan toplumsal, ekonomik ve politik değişimler gıda üretim süreçlerini ve beslenme kültürünü de tamamen değiştirmiştir. Bu süreç dünya gastronomi tarihinin daha iyi anlaşılabilmesi için pek çok önemli ipucunu da ortaya koymaktadır. Ülkelerin sahip olduğu mutfak kültürü ve gastronomik zenginlikler ulusal kimliğin önemli bileşenleri olmalarının yanında günümüzde önemli birer seyahat motivasyonu haline de gelmiştir. Bu değerler ayrıca destinasyon seçim sürecinde belirleyici olan unsurlar arasındadır. Bu çalışmada Avustralya mutfak kültürünün tarihsel gelişimi ve olumlu bir Avustralya gastronomi imajı oluşturmaya yönelik çalışmalar, literatür taraması yöntemiyle incelenmiştir. Bu imaj çalışmaları sonucunda hem ülkeyi ziyaret eden turistlerin toplam yiyecek içecek harcamalarının arttığı (%38) hem de Avustralya’nın gastronomi imajının olumlu yönde değiştiği belirlenmiştir.

HISTORICAL DEVELOPMENT OF AUSTRALIAN CUISINE AND EFFORTS ON AUSTRALIAN FOOD IMAGE

Öz:
The aim of this study is to examine the historical development of Australian culinary culture and efforts on Australian food image. The Aborigines, who are thought to have settled in Australia about 50,000-60,000 years ago, preserved their way of life and diet until the 18th century. During this period, they obtained their needs directly from nature without agriculture and animal husbandry. The dramatic transformation process, started in 18th century when first Europeans settled on the continent, has continued until today. Migrations, social, economic and political changes have completely changed the food production processes and food culture. This process reveals many important clues for a better understanding of history of world gastronomy. Today gastronomic values has become a travel motivation and they are important factors determining the consumer's choice of destination. This study is a literature review which examines the historical development of Australian culinary culture and efforts to create a positive Australian food image. As a result of this efforts it has been determined that spending on food and beverage by international visitors has increased by 38% and the gastronomy image of Australia has changed positively.
