Antimicrobial properties of wild fruits

Öz:
Yaygın olarak ormanlık alanlarda doğal olarak yetişen yabani meyvelerin besin içerikleri açısından oldukça önemli kaynaklar olduğu bilinmektedir. Son yıllarda insanların sağlık üzerine olumlu etkilerinden dolayı doğal gıdalarla beslenmeye özen göstermeye başlamasıyla birlikte doğal bitki ve meyvelerle ilgili olarak yapılan çalışmalar da artış göstermiştir. Ülkemiz, gıda olarak tüketilen yabani meyveler açısından oldukça zengin çeşitliliğe sahiptir. Bu konuda yürütülen önceki çalışmalarda yabani meyveler daha çok gıda içerikleri açısından incelenmiş, bu tip meyvelerin antimikrobiyal özelliklerinin belirlenmesine yönelik olarak ise sınırlı sayıda çalışma yapılmıştır. Bu derlemede, yabani meyvelerde antimikrobiyal özellik gösteren maddeler, bu maddelerin antimikrobiyal etki mekanizması ve gıda mikrobiyolojisi açısından önemli olan patojen mikroorganizmalar üzerine etkilerini inceleyen çalışmalar değerlendirilmiştir

It is known that wild fruits, naturally grown in forest regions, are very important sources in terms of nutrient contents. In recent years, people are beginning to take care for consuming natural foods, because of their positive effects on health and the studies related with natural plants and fruits have also increased. Our country has a fairly rich diversity in wild fruits, which are consumed as food. In previous studies, wild fruits have been mostly examined in terms of food ingredients, while the antimicrobial properties of this type of fruits have been investigated in a limited number of studies. In this review, antimicrobial agents found in wild fruits, their antimicrobial mechanism and the effects on pathogenic microorganisms, important in food microbiology, were evaluated
