ENZİME DİRENÇLİ NİŞASTA ÜRETİM YÖNTEMLERİ VE GIDA ENDÜSTRİSİNDE KULLANIM AMAÇLARI

Öz:
Gıdaların olası sağlık yararları üzerine artan toplum ilgisi, gıda endüstrisini fonksiyonel gıdalarıngeliştirilmesi yönünde teşvik etmektedir. Besleyici değeri bulunan ve sağlık için faydalı olan bu gıdalarınüretiminde, birincil enerji kaynağı olan karbonhidratlar büyük önem arz etmektedir. Temel birkarbonhidrat ve bitkisel gıda bileşeni olan nişasta gıdalara önemli fonksiyonel gıda özelliklerikazandırabilmektedir. Enzime dirençli nişasta (EDN) sağlıklı insanların ince bağırsaklarında sindirimedirenç gösteren nişasta olarak tanımlanmakta ve bu özelliği ile diyet lif gibi davranması sayesindefonksiyonel gıda katkısı olarak gıdalarda kullanılabilmesi nedeniyle nişastanın fonksiyonel gıda özelliğineen önemli örneklerden birini teşkil etmektedir. EDN; hidrotermal işlemler, mikrodalga uygulaması,ekstrüzyon işlemi, ultrasonikasyon işlemi, enzim uygulaması, kimyasal uygulamalar ve tüm bu işlemlerinbir veya birkaçının kombinasyonu kullanılarak üretilebilmekte ve çeşitli gıdalara katkılanarak fonksiyonelgıda üretiminde kullanılabilmektedir.

ENZYME RESISTANT STARCH PRODUCTION METHODS AND ITS INTENDED PURPOSES IN FOOD INDUSTRY

Öz:
Increasing public attention on the potential health benefits of foods has encouraged the food industryto develop functional foods. Carbohydrates, the primary energy source, have a great importance inproduction of these nutritious and healthful foods. Starch is a basic herbal food ingredient andcarbohydrate and it gives important functional food properties to the foods. Enzyme resistant starch(ERS) is defined as the starch that resists to digestion at small intestine of healthy humans, by thismeans it acts like dietary fibers. It constitutes one of the greatest example to the functional foodproperties of starch because ERS can be used as functional food additives in foods. ERS is producedusing hydrothermal process, microwave treatment, extrusion process, ultrasonication process, enzymetreatment, chemical treatments and the combination of one or some of these processes and it can beused in production of functional food with its addition to various foods.
