Modifiye Atmosfer Ve Metil Jasmonat Uygulamalarının Agaricus bisporus’un Hasat Sonrası Kalite Ve Muhafaza Ömrüne Etkileri

Öz:
Bu araştırmada, Agaricus bisporus yemeklik mantar türünde muhafaza öncesi yapılan farklı modifiye atmosfer paketleme (MAP) ve metil jasmonat (MeJA) uygulamalarının hasat sonrası kalite ve muhafaza ömrüne etkileri çalışılmıştır. Araştırmada kullanılacak olan mantarlar Van Yüzüncü Yıl Üniversitesi, Mantar Araştırmaları Uygulama ve Araştırma Merkezi bünyesinde bulunan mantarhaneden temin edilmiştir. 1 gün ön soğutma uygulaması yapılan aynı olgunluğa sahip mantarlar 3 ayrı gruba ayrılmış, birinci grup örnekler kontrol grubu olarak sadece saf suya daldırılmıştır. İkinci grup örnekler 0.5 mM, üçüncü grup örnekler ise 1 mM dozundaki MeJA çözeltisine 2 dakika süreyle daldırılmıştır. Daha sonra mantarlar köpük tabak içerisinde alınıp MAP ve streç film ile kaplanarak 4oC sıcaklık ve %90-95 oransal nem içeren soğuk hava deposunda 20 gün süre ile muhafaza edilmiştir. Üç tekerrürlü olarak hazırlanan mantar örneklerinin başlangıç ile birlikte her 5 günde bir, 20 gün boyunca analizleri yapılmıştır. Araştırma sonucunda A. bisporus mantarının 4°C’de 20 gün boyunca başarılı bir şekilde depolanabildiği tespit edilmiştir. Çalışmada incelenen kalite kriterlerinden ağırlık kaybı ve ambalaj içi gaz bileşenlerinden oksijen ve karbondioksit miktarı bakımıdan MAP uygulaması öne çıkarken; TEA, L*, kroma, hue, solumun ve etilen açısından ise streç film uygulaması daha başarılı bulunmuştır. MeJA uygulamalarının A. bisporus mantar türü üzerinde belirgin bir etkisi saptanamamıştır.

Öz:
In this study, the effects of different modified atmosphere packing (MAP) and methyl Jasmonate (MeJA) applications on the postharvest quality and shelf life of Agaricus bisporus. Mushrooms produced in the mushroom house of Van Yuzuncu Yil University, Mushroom Research Application and Research Center was used as the research material. The mushroom of the same size, which had been pre-cooled for 1 day, were separated into 3 separate groups and the first group samples were only immersed in pure water for 2 minutes as a control group. The second group of mushroom samples was immersed in 0.5 μM of MeJA solution for 2 minutes and the third group was immersed in 1 μM of MeJA solution for 2 minutes. The mushrooms were then placed in a foam dish and covered with LifePack MAP (MAP) and stretch film and then stored in a cold air storage at 4 C° and 90-95% relative humidity. Mushroom samples prepared in tree replicates were analyzed for 20 days at 5 day intervals with the beginning. At the end of the research, it was determined that A. bisporus could be successfully stored at 4 ° C for 20 days. For the parameters studied in the experiment, MAP comes forward for the weight loss from and the amount of oxygen and carbon dioxide from the in-pack gas components, while strech film comes forward for TA, L*, croma, hue, respiration and ethylene. No significant effect of MeJA on mushroom was detected.
