Akademik Disiplin Olarak Gastronomi: Kavramsal Bir Çalışma

Öz:
Bu araştırmada akademik disiplin olma ölçütlerinin yardımıyla gastronominin akademik disiplin olarak konumu incelenmiştir. Paradigma ve kuramsal alt yapı bakımından eksiklik, özgün bir araştırma sorusunun eksikliği ve doktora programlarının yaygın olmayışı gibi olumsuzluklar olsa da üniversitelerde gastronomi bölümlerinin sayıca artması, lisans ve lisansüstü eğitimlerin yaygınlaşması, akademik dergilerin çoğalması ve gastronomi alanında bir bilim camiasının oluşmaya başlaması gibi olumlu gelişmelerin akademik disiplin olma yolunda avantaj sağladığı düşünülmektedir. Literatürde, gastronomi alanının akademik bir disiplin olarak mevcut durumuyla ilgili disiplin olma ölçütlerine göre değerlendirildiği herhangi bir çalışmaya rastlanmaması sebebiyle bu çalışmanın hem ilgili literatüre fayda sağlayacağı hem de ileride yapılacak çalışmalara ışık tutacağı düşünülmektedir.

Gastronomy as an Academic Discipline: A Conceptual Study

Öz:
In this study, through criteria of being an academic discipline, gastronomy field was investigated. Although drawbacks such as lack of paradigm, theoretical background and an original research question, and uncommonness of doctoral programs; developments as increase in the number of gastronomy departments, undergraduate and graduate programs in universities, diversification of academic journals and formation of scientific community in the field are seen advantageous in terms of being accepted as an academic discipline. Since no study found in the current literature in which the field of gastronomy is evaluated as an academic discipline according to the existing disciplinary criteria, this research is attempt to contribute the literature as well as shed light on future studies.
