Su ürünlerinde Listeria monocytogens

Öz:
Listeria tatlı su ve denizlerden izole edildiği gibi çeşitli su ürünlerinden de izole edilen çevresel bir kontaminanttır.Aynca L. monocytogenes tütsülenmiş balık, pişirilmiş ve dondurulmuş su ürünleri, marinatlar ve surumi ürünleri gibi işlenmiş su ürünlerinden izole edilmiştir. L .monocytogenes ve diğer Listeria türleri su ürünlerinden 1987'den beri düzenli -bir şekilde izole edilmektedir.Pişirilmeden veya ısıl işlem uygulanmaksızın tüketilen ürünler insan sağlığı açısından tehlike yaratabilmektedir.Tüketilmeye hazır su ürünlerinin işlenmesinde aşağıdaki maddelerin uygulanması L. monocytogenes'in getireceği sağlık sorunlarının ortadan kaldırılmasında etkilidir. 1.Uygun ısıl işlem, tuzlama ve tütsüleme gibi işlemlerin uygulanması 2. işleme esnasında veya sonra kontaminasyonun önlenmesi 3. Soğuk depolama ve/veya inhibe edici bileşiklerin kullanılmasıdır.

Öz:
Listeria is an environmental contaminant which has been isolated from marine and fresh waters, as well as various seafoods.Furthermore, Listeria including L.monocytogenes has been isolated from processed seafood products such as smoked fish, cooked and frozen seafoods.marinated fish, sunimi products etc. L.monocytogenes and other Listeria spp. have been isolated from seafoods on a regular basis since 1987. Consumption of these products without additional heating or cooking may present a public health risk.Measures below will help to ensure that ready- to-eat seafoods remain safe for human consumption.: 1. Application of adequate thermal processing, smoking, brining etc. 2. Prevention of contamination during and after processing,especially if foods are being only partially cooked; and 3. Use of cold storage and/or inhibitory compounds to prevent outgrowth of survivors.
