Et ve et ürünlerinde biyojenik aminler

Öz:
Bu derlemede biyojenik aminlerin önemi, et ve et ürünlerinde oluşumu, oluşumlarını etkileyen faktörler ve bulunuşları tartışılmıştır. Biyojenik aminler gıda zehirlenmelerine ve bazı rahatsızlıklara neden oldukları için sağlık yönünden ve hayvansal gıdalarda mikroorganizmalar tarafından oluşturuldukları için hijyen açısından önemlidirler. Özellikle fermente gıdalar, olgunlaştırma ve depolama sırasında mikrobiyolojik bulaşmaya maruz kalmış gıdalar biyojenik amin içerebilirler. Gıdalarımızın kalitesini ve güvenirliğini arttırmak için bu aminlerin oluşmasında etkili olan koşulların iyi bilinmesi gerekmektedir.

Biogenic amines in meat and meat products

Öz:
Importance, occurrance and formation of biogenic amines and factors affecting the formation of biogenic amines in meat and meat products are reviewed. Biogenic amines are importent from a hygiene and health point of view because they are formed in foods as a result of microbial action and they can cause food poisining. Fermented foods and the foods have been exposed to microbial contamination during ageing and storage, are likely to contain amines. In order to improve the quality and safety of food is necessary to know the factors controlling amin formation.
