Probiyotik ve prebiyotiklerin fonksiyonel özellikleri

Öz:
Canlı mikroorganizma (probiyotik) içeren fonksiyonel gıdalara olan ticari ilgi, probiyotiklerin sindirim sistemindeki fonksiyonları üzerine yapılan araştırmalarla paralel olarak artmakladır. Son yıllarda birçok araştırıcı çalışmalarını, doğal sindirim sistemi florasını oluşturan Lactobacillus ve Bifidobacteria suşları üzerinde yoğunlaştırmıştır. Prebiyotikler, barsakta selektif bir fermantasyona sebep olan sindirilemeyen (oligosakkaritler vb.) gıda katkılarıdır. Prebiyotikler aynı zamanda vücut sağlığına faydalı bazı etkilere sahiptirler. Probiyotik ve prebiyotikler gıda ürünlerinde kombine olarak kullanılabilir ki bu durum simbiyotik olarak adlandırılır. Bu derlemede, fonksiyonel özelliklere sahip olan probiyotik ve prebiyotiklerin önemine dikkat çekilmiştir.

Functional characteristics of probiotics and prebiotics

Öz:
The commercial interest on functional foods containing live microorganisms named probiotics increases to be parallel to studies conducting on functionalities of probiotics in the digestive tract. In recent years, most researchers have focused on intestinal Lactobacillus and Bifidobacteria species being part of the natural gastrointestinal microbiota. Prebiotics are non-digestible food ingredients (e.g. oligosaccharides) having a selective fermentation in the colon. Prebiotics also have some benefits on body health. Probiotics and prebiotics may be used as a combine in food products, called to be a symbiotic. In this review, the use of probiotics and prebiotics as functional foods were outlined.
