COVID-19 SONRASI GELİŞEN MUTFAK AKIMI: BULUT MUTFAK

Öz:
Covid-19 pandemisi küresel bazda birçok sektörü olumsuz yönde etkilerken yiyecek-içecek sektörü yeni pazarlama arayışı içinde paket servis ve gel-al-götür konseptlerinde işletme faaliyetlerini yoğunlaştırmıştır. Teknolojinin gelişmesi ile işletmelerin paket servis organizasyonlarına online sipariş tabanlı bulut mutfak ile yeni bir boyut eklenmiştir. Bulut mutfak işletmelere yatırım sermayesi, işletme giderleri, personel sayısı gibi birçok ekonomik alanda fayda sağladığı gibi işletmenin sadece üretime odaklanması ile ürün kalitesini arttırmasına olanak sağlamaktadır. Bu avantajlar ile birlikte çalışmanın amacı yeni bir paket servis organizasyonu ve işletmeciliği olan bulut mutfağın tanıtılması, işleyişi ve avantajları hakkında bilgi vermektir. Bulut mutfak kavramının yeni olması ile birlikte bu kavramın detaylı bir şekilde açıklanması çalışmanın önemini göstermektedir. Bulut mutfak hem pazarda hali hazırda bulunan yiyecek-içecek işletmelerinin hem de sınırlı sermayeye sahip yeni girişimcilerin de yer alacağı bir platformdur. Pandemi sürecinde pazar payını hızla artıran bulut mutfak gelecekte daha fazla işletmecinin ilgisini çekebilir. Dolayısı ile yiyecek-içecek işletmelerinin orta ve uzun vadeli pazarlama stratejilerinde bulut mutfak uygulamasına yer vermesi işletmeye katkı sağlayacağı düşünülmektedir.

The food and beverage industry has intensified its business activities in the concepts of takeaway and come-take-away in search of new marketing while the Covid-19 pandemic has negatively affected many sectors on a global basis. With the development of technology, a new dimension has been added to the package service organizations of enterprises with online order-based cloud kitchen. Cloud kitchen provides benefits to businesses in many economic areas such as investment capital, operating expenses, number of personnel, and allows the business to increase product quality by focusing only on production. The aim of working with these advantages is to give information about the introduction, operation and advantages of cloud kitchen, which is a new takeaway organization and management. With the concept of cloud kitchen being new, the detailed explanation of this concept shows the importance of the study. Cloud kitchen is a platform where both food and beverage businesses that are already in the market and new entrepreneurs with limited capital will take part. Cloud kitchen, which has rapidly increased its market share during the pandemic process, will attract more entrepreneurs in the future. Therefore, it is thought that the use of cloud kitchen application in the medium and long-term marketing strategies of food and beverage businesses will contribute to the business.
