Gıda kaynaklı patojenler için kesim öncesi dekontaminasyon uygulamaları

Öz:
Her yıl milyonlarca insan, gıda kaynaklı patojen bakterilerin neden olduğu hastalıklara yakalanmakta v.e bu hastalıkların birçoğunda hayvansal gıdalar sorumlu tutulmaktadır. Kesim sonrası müdahale stratejileri ve HACCP, bakteriyel kontaminasyon düzeyini önemli ölçüde azaltmakla birlikte, tam bir güvence sağlamada yeterli görülmemektedir. Bu nedenle, bu uygulamaların çiftliği de kapsayacak şekilde genişletilmesi, et hijyeninin daha etkin biçimde sağlanmasına olanak verecektir. Kesim öncesi müdahale stratejileri günümüzde halen araştırma konusudur. Aşılama, yarışmalı dışlama, subsrat adapte edilmiş yarışmalı dışlama, probiyotik ve prebiyotiklerin kullanımı tartışılan uygulamalar arasındadır. Bakteriyofaj kullanımı ve spesifik patojenlerin fizyolojilerinden yararlanma gibi diğer stratejilerin yanında antibiyotik kullanımı ve diyet değişiklikleri de bu alanda ele alınmaktadır.

Preslaughter decontamination strategies for food-borne pathogens

Öz:
Millions of people are affected by food-borne pathogenic bacteria annually and foods produced from animals are responsible for many of these illnesses. Postslaughter intervention strategies and HACCP effectively reduce bacterial contamination level. However, these strategies are not sufficient for providing food safety. Therefore, strategies that expand the continuum of intervention from the abattoir back to the farm will be able to provide meat hygiene more effectively. Preslaughter intervention strategies are currently under investigation. Vaccination, competitive exclusion, substrate-adapted competitive exclusion, use of probiotics, prebiotics, and bacteriophages, exploitation of the physiology of spesific pathogens, antibiotic usage and dietary changes are disscussed for this purpose.
