Turistlerin Yerel Yiyecek Tüketme ve Satın Alma Davranışları Üzerine Kavramsal Bir Çalışma

Öz:
Yerel yiyecekler tüketicilere iki şekilde ulaşmaktadır: (1) Yerel yiyeceklerle hazırlanan menüler, tüketiciler tarafından yiyecek ve içecek işletmelerinde tüketilmektedir. (2) Yerel yiyecekler, tüketiciler tarafından yerel marketlerden, çiftlik dükkânlarından, gıda kooperatiflerinden ve çiftçi pazarlarından satın alınmaktadır. Turist deneyiminin önemli bir parçası olan bu iki davranışa sebep olan birçok değişken söz konusudur. Bu değişkenlerin keşfi turizmde önemli bir akademik alt yapının oluşmasına sebep olmuştur. Bu sebeple çalışmanın amacı turistlerin yerel yiyecek tüketme ve satın alma davranışlarını ayrı ayrı incelemek ve bu davranışları etkileyen değişkenleri örnek çalışmalar ile değerlendirmektir. Bu maksatla öncelikle yerel yiyecek ile ilgili literatür derlemesi yapılmış, daha sonra turistlerin yerel yiyecek tüketme ve satın alma davranışları söz konusu değişkenler çerçevesinde incelenmiştir. Çalışmanın sonuç bölümünde ise turistlerin yerel yiyecek tüketme ve satın alma davranışları ile ilgili mevcut çalışmalar irdelenerek konu hakkında öneriler sunulmuştur.

A Conceptual Study on Local Food Consumption and Purchasing Behaviors of Tourists

Öz:
Local foods reach consumers in two ways: (1) Menus prepared with local foods are consumed by consumers in food and beverages businesses. (2) Local foods are bought by consumers from local markets, farm shops, food cooperatives and farmers' markets. There are many variables that cause these two behaviors, which are an important part of the tourist experience. The discovery of these variables has led to an important academic background in tourism. For this reason, the purpose of study is to examine the local food consumption and purchasing behaviors of tourists separately and to evaluate the variables affecting these behaviors with sample studies. Firstly, this paper reviews the existing literature on local food, then examines the local food consumption and purchasing behaviors of tourists within the context of these variables. In the conclusion of the study, existing studies about tourists' consumption and purchasing behaviors of local foods were examined and suggestions were presented.
