Sokak Yemekleri: Farklı Disiplinlerin Yaklaşımı ve Gastronomi Turizmi Alanında Sokak Yemeklerinin Değerlendirilmesi

Öz:
Bu çalışmada turizm ve gastronomi alanında değerlendirilmeye aday bir olgu olarak sokak yemeklerinin tartışmaya açılması amaçlanmıştır. Günümüzde kimi önde gelen turizm destinasyonlarında sokak yemeklerinin önemli bir çekim oluşturduğu ve destinasyon pazarlanmasında kullanıldığı görülmektedir. Ancak gastronomi turizmi yazınında restoranlar, çiftlikler ya da festivallere odaklanılırken, sokak yemekleri üzerine kısıtlı sayıda araştırma bulunması dikkat çekmektedir. Bu çalışmada sokak yemeklerini konu edinen farklı disiplinlerden çalışmaların kapsamlı bir derlemesi sunularak gastronomi alanında yapılacak çalışmalara zemin oluşturması amaçlanmıştır. Gıda güvenliği ve sokak yemeklerinin düzenlemesine yönelik önemli bir yazın geliştiği halde, gastronomi ve turizm alanından araştırmacıların ancak yakın dönemde konuya ilgi göstermeye başladığı anlaşılmaktadır. Bu alandaki eksikliğe katkı sunabilmek amacıyla sokak yemeklerinin gastronomik turizm ürünü olarak değerlendirilmesi yönünde bir tartışma sunularak çalışma sonlandırılmıştır.

Street Food: A Multidisciplinary Approach and Discussion of Street Foods as Gastronomic Products

Öz:
This conceptual paper aims to discuss street foods as an important phenomenon in tourism and gastronomy fields of research. Street foods are sources for tourist attraction in some of the prominent tourist destinations and actively used for destination marketing. Yet gastronomy studies generally concentrated on restaurants, farms or food festivals while leaving street foods mostly overlooked. This study presents a review of literature in various fields of research in an attempt to trigger future studies in gastronomy too. The literature review points a substantial accumulation of studies especially in food safety and governance of street foods, on the other hand, paucity but also a growing interest in gastronomy and tourism studies. Street food is discussed and proposed as a gastronomic tourism product in this paper in an attempt to contribute this paucity in the field.
