Süt ve süt ürünlerinde listeria monocytogenes varlığı

Öz:
Doğada çok yaygın olarak bulunan Listeria türleri ve özellikle de Listeria monocytogenes insan ve birçok hayvan türü için patojen bir mikroorganizmadır. Bu mikroorganizma ısı, pH ve tuz gibi dış şartlara da oldukça dayanıklıdır ve çevre şartlarında yıllarca canlı kalabilir. Son yıllarda insanlarda görülen Listeria salgınlarında basta süt ve süt ürünleri olmak üzere et ve et ürünleri, balık ve kanatlı etleri gibi hayvansal kökenli gıdaların önemli bir rol oynadıgı ortaya konmustur. Listeria monocytogenes dogada yaygın bulunmasından dolayı bunun gıda kaynaklarından tamamen elimine edilmesi neredeyse imkansız gibidir. Gıda işletmelerinde HACCP'in (Hazard Analysis Critical Control Point) öngördügü kurallara uyularak, hijyenik isleme koşulları ile bu mikroorganizmayla ilgili sağlık tehlikesi minimuma indirilebilir.

The existence of listeria monocytogenes in milk products

Öz:
Listeria spp and particularly Listeria monocytogenes is a human and a wide varity of animals pathogen that are widespread in nature. Listeria monocytogenes is a hardy organism such as heat, pH and salt so that can survive for many years in the cold naturally infected sources. Listeria monocytogenes is a bacterial pathogen that has recently caused several food associated outbreak of disease. In recent years it has been determined that some food as milk, milk products, meat, meat producs, chicken and fish of animal origine particulary milk and milk products played a major causative role in Listeria outbreak. Listeria monocytogenes has been isolated from a wide variety of foods, including milk, dairy products, meat, chicken and fish, most of the foodborne Listeriosis outbreaks have been linked to the consumption of dairy products as well as other foods. Because of the wisespread nature of the organism, it is nearly impossible to eliminate it from the food suppl somewhat by using (HACCP) Hazard Analysis Critical Control Point approach and good manifacture practice, sanitation, hygienic processing conditions. The health hazard associates with this organisms can be reduced to a minimum.
